
How it started...
and how it's going
I started Sam's Coolkies completely by accident. After years of poor gut health, I decided to re-evaluated my relationship with food, and became empowered by studying the mind-gut connection and nutritional psychiatry. The concept of healthy food for me drastically shifted from a toxic habit of calorie counting, to actually viewing food as this beautiful tool for optimizing physical and mental health. With that being said, I absolutely LOVE cookies (or as the English say, "biscuits"), yet whenever I indulged in my favourite treat I was left feeling bloated and lethargic. So, I began a project - creating a cookie that made me feel as good as it tasted. My aim was to create dark chocolate chip cookie that were plant-based, gluten and refined sugar free, and contained adaptogenic mushrooms for additional healing benefits. I recipe-tested on my flatmates, who I ate countless disgusting versions until I got one that was just right ("they actually taste really good" is Sam's Coolkies unofficial catchphrase!) I started baking them for friends on the same health journey, or who just wanted a sweet treat, and they became so popular that I started selling them very soon after.
They were promoted on billboards throughout London via Delli Market in December 2022, Dua Lipa shouted them out as her favourite healthy cookies on Instagram, and I'm currently stocked at Tease in South Kensington, Shreeji News in Marylebone, and Jusu Brothers in Notting Hill. I started baking full-time out of Mission Kitchen in February, a commercial kitchen space in Vauxhall, hired the loveliest baking assistant named Emily who I couldn't live without, and I'm now able to start scaling my small business to the next level!
